A challenging day for everyone at work because of a new menu introduced into the schedule. This happens once in a while and can be unsettling for a few days while the chefs learn this new routine.
For me as an assistant this is just as difficult, but I'm relieved that we've got the first day behind us.
We now have a night shift team, only a couple of people but we are recruiting. They will take the heat out of the day schedule by taking on a lot of the big jobs that need oven space at peak times. This will help a lot by start of the spring flight schedules.
