Hahahha good question. I might have a theory (if we're talking about the image), lately I have been using my wife's phone to record, which is a samsung, it's one of the latest version.
And they all have AI software integrated in the phone, it slightly changes some information that we see; like the light, colours, and some shapes.
For examples, faces are a little bit stretched. I think an IPhone is using the same technology, so the data are interpreted the same way. It makes a blue sky pop, better effects on shades, especially in full HD.
It also makes the image a little bit more vibrant. If it's about the sounds, well...Iphone sound is just better!
