Lark Distillery Pontville Tasmania

If you like Whiskey then you may know who Lark are. They are arguably Australia's best known and possibly even best Whiskey Distillery. Tasmanaia which is the island off the bottom of what you might consider to be Australia has quite a impressive Whiskey scene, and Lark was the forerunner to most of that. Established in 1992 is young by world standards, but the oldest of the new wave of Whiskey distillers in Australia. There was distillers back in the day but it was outlawed in the about he 1840's and Lark needed to get the law changed in the 1990's to open.

Now they have a number of places where they they actually make the whisky in Tasmania, and Pontville is supposedly one of them. The truth is they don't actually distill there at the moment, but on site is the Cooperage - which is the place that they make and more importantly for Lark given they tend to age in own wine barrels repair barrels. And the Bond stores, which is where the Whiskey is matured in those barrels.

And the rest of the property is a visitors centre and an amazing old homestead, which is what we will see today. The Property was known as the Sheene Estate which started as a farming land grant in of about 2000 acres (close enough to 120km by 120km) in 1819 (stealing the land from the native aboriginal people), with the buildings built in around the 1850-1865 era, generally by convict labour (people transported from England and Ireland) so you know, like most historic things it's a bit probelmatic, but hey it is pretty

The most impressive building is the one above, which lets face it looks like a big old church, but is in fact..... A stable for horses - I guess they really liked their horses.

If you find yourself in Hobart it's worth jumping in the car for 30 minutes to get to pontville, you can then do a tour, you won't see anyone actually distilling, but you will get to taste 3-4 whiskeys, and if you are anything like me you will get into a long conversation with Cooper all about Barrels and come away with a deep appreciation for what a cooper does.

Or don't do the tour and just wander around the grounds and admire the buildings.
