I think a few things that will help Starship land safely. They are very accurate in their landings so they shouldn't have any side-drift as they touch down. If they have legs that span 20 m and can adjust 15 degrees, they should be able to handle quite a bit of surface variation. Their final landing rockets are Dracos higher on the ship which should help counter the center-of-mass issues.
