I'm not a foodie but my all-time favorite food is plantain. I can eat it in any way it can be presented; fried, boiled, grilled, roasted, baked, minced, ripe or unripe. So long as it is plantain, I can never get tired of it.

The best way I love to eat my plantain, however, is when it is being prepared as plantain frittata.
The first time I tasted it, my mom prepared it to welcome me home from school. It was the holiday after my 1st year in the university and according to her, she was thinking of something special to prepare for me when she came across this dish online. Since she is a retired chef and plantain is my favorite meal, she decided to try it out.
It was her first attempt and my first time having it, but I loved it so much that and even attempted to prepare it by myself the following day.
Now every time there is a special occasion or I want to feel good about what I'm going to eat, I go ahead to prepare this delicious delicacy myself.
I learned that it was gotten from an Italian dish and because of that, I have made a mental note to get myself the Italian version of that dish, just to satisfy my curiosity.
The first time I attempted making plantain frittata, I got ripe plantains but they were not overly ripe or soft, eggs, onions, vegetable oil, red bell pepper, fresh tomatoes, carrots, ginger, and garlic for the meat I was going to include. I also got curry and thyme and since we had seasoning cubes and salt in the house, those were the only ingredients I didn't get.

I also got some sausages because my mom told me she used them even though I didn't see the need as I was already using diced meat.
I chopped all my vegetables except for the pepper, I blended it, then seasoned the small portion of meat I was going to use and boiled it. When it was soft, I diced it into smaller bits.
Then I took out a frying pan, rinsed it, and placed it on the gas cooker I was using. When the pan was hot I turned a little vegetable oil into it and poured in my veggies; carrots, tomatoes, pepper, sausages, and onions. I also poured in the diced meat at the point too.
Then I added some seasoning to it; one seasoning cube, a pinch of salt, curry, and thyme.
I stirred it for a while and when it was finely fried, I turned off the fire. I had to turn the mixture out into a bowl so it could cool off.
Then I rinsed the plantain, sliced it into circular shapes, and fried them.
While that was on fire, I took out the eggs rinsed them off, and broke them into a plate. Then I added a pinch of salt and half of a seasoning cube and whisked it together.
When the fried veggies had cooled off enough, I turned them into the eggs and whisked everything together.
My mother said it was nicer to use margarine to make the frittata but I don't like cooking with margarine so I used my vegetable oil once again for the final process.
I rinsed out a nonstick frying pan and put it on fire, when it was dry, I turned in a tiny amount of oil and spread it around the pan then turned in the egg mixture.
At this point, I had to reduce the fire to the lowest to avoid the frittata from burning, then I put the fried plantain one after the other in the mixture on fire.
I cannot recall how long I left it for but I didn't leave the kitchen until I was sure that the frittata was well cooked. Then I turned off my gas and served the plantain frittata.
Apart from the fact that I can never get tired of plantain, I love plantain frittata because it is delicious, and I totally enjoy it while satisfying me at the same time. For other foods, I have to force myself to eat a certain quantity if I want to be satisfied. This is because I get tired of dishes easily, but with plantain frittata, it's different. I enjoy every bite down to the last and every time I have it, I always wish it never finishes.
If you are someone who gets tired of food easily like me, or you're a lover of plantain, or you're tired of the regular dishes and you need something new, I recommend this plantain frittata dish.
I like to eat mine with either a cold bottle of yogurt, or a steaming cup of thick tea, but that depends on how hungry I am.

Seriously, you are making me crave plantains so much because they are now becoming gold to buy now. Plantains are a very lovely food, which I love so much, and trust me, the taste is nothing to be compared with.
