I don't see an 'english' tag for this post. I think the language should go into a special tag like "langs": ["en"] and if multilingual something like langs: ["en", "es", "ru"]. The problem is, as it would be great for searching, unless both PeakD and Ecency start adding that to the posts, the software using this meta-data will not know the language of the posts. However, if we put "#Spanish" in everything written in Spanish, we will never be able to find posts about the Spanish language itself because the tag will be used in this other way.

I unerstand what you are concerned about, but those tags were decided on a long time ago by the communitys/guilds for those language areas. So #spanish is #spanish and will stay #spanish, unless the main part of the Spanish speaking community tells us to do different.^^
Since english is the main language here, nobody felt the need to implement this tag.
