Working in the restaurant back of house in the bakery area was probably the most fun part of my job ever. I learned so much about cakes, muffins, cookies, and pies in those years.

Here are some of the top tips I learned to help you make the best cookies ever:

Work with the dough as little as possible.

Overworking any cookie dough can lead to tough cookies. And tough cookies are just--blah. NO amount of dipping in milk, coffee, or tea can help.

When mixing your cookie dough, mix it until the ingredients are just combined. Work with half the dough when rolling it out or placing it on the cookie sheet as well.

Use parchment paper when you can.

Parchment paper in most recipes will keep you from having to "grease the pan" and adding extra oil or butter to your recipe. It will also help keep the bottoms from burning as quickly.

Parchment paper will also make your cookie sheets far easier to clean up as well.

Follow the recipe for measuring ingredients.

This should go without saying, but it bears repeating. If you are using a recipe, such as macarons, that call for weighing the ingredients, do so. Some recipes need ingredients by weight, not volume (grams versus cups for example.)

Also, if your recipe calls for preheating the oven, please do so. Heating the oven when you have a tray of cookies in there can mess up your cooking times and result in over baked or under baked cookies.

Allow cooling time on the cookie sheet.

If your recipe calls for you to keep the cookies in the oven for 10 minutes, keep them in there for 9. Then, allow the cookies 2-3 minutes cooling time on the baking sheet. This little trick will allow you to have fully baked cookies that remain soft, tender, and delicious.
