東山にある創業昭和22年の和菓子店。 主に上生菓子や生菓子を予約制で作られている菓子店で、金沢ではお茶会や料亭さんで登場することがあります。今まで数々の名茶会に吉はしさんのお菓子が出されたことでしょう、季節の上生菓子はもちろん、テーマに合わせてオリジナルで作ってくれたりもします。「こちらは吉はしさんのお菓子です」と出されると、「あら、吉はしさんのお菓子だなんて特別ね」と、出した側が一目置かれるほどです。 

生菓子は事前予約ですが、その他当日でも買える生菓子や干菓子もあります。が、特に生菓子は売り切れが早いので、お取り置きの電話をされることをお勧めします。

特筆したいのは、電話も店頭での対応もとても丁寧なことで、「私、いいお菓子買いに来たんだわ」という気持ちを高めてくれます。

“てきすい”と読む、名前から風流な夏限定の涼菓。
吉はしさんのお菓子はどれも素晴らしいですが、中でも特に好きなお菓子。新しい美味しさをオリジナルで生み出し、味わいが完成されている逸品です。
笹の葉に包まれ、見た目からもう涼しげです。しっかり冷やしてから食べるのが美味しいです。
蓮根のでんぷん、抹茶、能登のミルクを使用したお菓子。ゼラチンとも寒天とも違うし、プリンともまた違う独特な食感。ふるふるとみずみずしいですが、ややしっかりめの弾力があります。蒟蒻ゼリーに近いかな。
能登ミルクの優しい味わいに、抹茶と笹の葉の青い風味がのっている。喉ごしに清涼感もあり、ちゅるんと胃に滑っていきます。

It is a sweet made with lotus root starch, matcha tea, and Noto milk.It has a unique texture that is different from gelatin, agar, and pudding.It is moist and fluffy, but there is a slightly firm elasticity.I wonder if it is close to Konnyaku jelly. The gentle taste of Noto milk is complemented by the blue flavor of matcha and bamboo leaves.There is also a feeling of coolness in the throat, and it slips to the stomach.

フルーツ大福は半分にカットすると断面が写真映えすることもあり、いろんなところで見かけるようになりましたが、美味しいフルーツ大福というものを同店が教えてくれたように思います。なんと言っても、まず求肥の繊細さ。お持ち帰りできるかのギリギリの繊細さなんです。
特に桃は、今にもとろけて液体になりそうなやわらかい求肥と白餡、果汁の多いジューシーな桃が口の中で絡み合い美味です。
