Meal Prep Misadventures: Coodles (Cabbage Noodles)

Those of us on Keto have trouble with noodle replacements. You might not be able to get your hands on shirotake noodles, or you just might miss the feel of ribbon pasta. These are a moderately-tolerable noodle substitute that also gets you to eat your leafy greens.

Instruments

  • Large electric frypan with lid
  • Pasta fork
  • Favourite butter handling device
  • SHARP knife

Ingredients

  • 1 wombok cabbage [alternately called Chinese Cabbage]
  • 1 sugarloaf cabbage
  • 1 hand-width of a leek [2-3 inches or 5-8 cm]

  • "Enough" butter [measure with your heart]

Instructions

  • Thinly slice your cabbage and leek
  • Set the frypan on low and melt butter
  • Add sliced cabbage and leek mix to frypan and cover until steam is visible on the lid
  • Stir/toss in frypan intermittently
  • Continue until your coodles are soft, then remove the heat

On their own, coodles can get very monotonous. That's why I recommend serving them with something. They're best with different flavour/texture profiles, or even smothered in a tasty sauce.

As you might guess, these are two cabbages that I can safely ingest. You can replace either of those with your favourite cabbage as you like.

During cooking, these veg tend to generate their own juice, so be sure to coat your 'noodles' as liberally as you can.
