Chocolate Coffee Cookies

Check out plant based Plant Power Cooking Challenge created by @JustinParke.
On this week’s ingredients list I found coffee and I made chocolate coffee cookies.

Ingredients:

  • 65 g of vegan butter or margarine
  • 80 g of brown sugar
  • 200 g of all-purpose flour
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder
  • 1 teaspoon of sodium bicarbonate
  • vanilla extract
  • 30 g of cocoa powder
  • 60 ml of strong coffee
  • 50 g of dark chocolate

Preparation:

  1. Cook a strong coffee out of 1 ml of water and 4 teaspoons of coffee. Set aside to cool down.
  2. Shake all dry over a sieve and mix them evenly. Add coffee to the mix and combine it with a spoon.

    Add cold pieces of butter and start kneading with your hands. Knead until you form a sticky ball of dough. If the dough is too dry, add a drop of plant based milk. Wrap the dough onto a stretch foil and place it in a fridge for at least 30 minutes.

  3. Roll the dough on a floured surface and cut the cookies using cookie cutters or a glass.

    Place them on a baking tray, covered with baking paper.

  4. Put them in preheated oven on 180 ⁰C for about 15 minutes.

  5. Serve them with a cup of coffee.

Chocolate and coffee go together so well! I've just given up coffee again - dammit - but I reckon you could use decaf for the taste, right?

I actually think that for fast made cookies it would be best to use instant coffee, as the taste infuses faster into the dough. In that case you wouldn't even have to cook the coffee. But for sure you could use any kind of substitute :)

Well these are awesome, and you didn't even casually mention that is Turkish coffee your brewed. I bet the coffee you made these cookies with is tastier than the coffee I drink every day. Another home run chef, save a me a couple would ya?

Oh Turkish coffee is a tradition here and therefor we are lucky to have really quality coffee on the market and for the available price as well.
I will keep in mind to include more info on coffee in future posts. Thanks for the inspiration! ;)

Love love love those. I think that coffee and chocolate the way you did these are so sophisticated. If I were to eat any cookie this would be the one. I have said it before you are a master at baked goods among the other awesome things you create.

I love the photos. The look of the cookies on the wood are picture perfect.

It is a special match of bitter and sweet taste and as much we love coffee here those would never last long. :D
The beautiful weather really makes it easier in this season to make photos.
