Vegan Creamy Garlic Cheese and other cheesy recipes

Today I will describe a few easy recipes that don't take more than 5 minutes (if we disregard homemade bread of course).
I will show you a really easy and fast recipe for Vegan Creamy Garlic Cheese. I love to use it for mac and cheese, in sauces, as a salad dressing, as a dip or a spread. The main ingredients in my cheese are silken tofu and nutritional yeast which will add a cheesy parmesan taste.
Nutritional yeast is not only delicious but also really nutritious. It contains calcium, iron, magnesium, phosphorus, potassium, sulfur and zinc. Its a great source of plant protein as it contain amino acids which are essential for our body.
I use silken tofu daily in my Vegan Yogurt recipe, that doesn't take even a minute.
I will also describe a recipe for Vegan Cheesy Herb Butter using Vegan Creamy Garlic Cheese as an ingredient. I couldn't eat it without bread, so I baked some homemade bread too.

Ingredients for Creamy Garlic Cheese:
  • 400 g of silken tofu
  • 6 cloves of garlic
  • white wine vinegar or apple cider vinegar or lemon juice
  • a teaspoon of yellow mustard
  • 2 tablespoons of olive oil
  • 35 g of nutritional yeast
  • onion powder vegetable salt
  • salt to taste

  1. Drizzle garlic cloves with olive oil and salt and roast in the oven until golden color.
  2. Blend all the ingredients and your creamy cheese sauce is ready.
Ingredients for a Vegan Cheesy Herb Butter:
  • 50 g of creamy garlic cheese
  • 30 g of coconut butter
  • a clove of garlic
  • chive
  • parsley
  • marjoram
  • sage
  • salt to taste
  1. Melt coconut butter, cool it down to a room temperature.
  2. Mix it with some creamy garlic cheese, a bunch of fresh chopped herbs (you can use dry also), and store it in a refrigerator.

Homemade bread

Since I live deep in the woods and bakery is rarely available for me I bake homemade bread. It's also really economical. I like to make about 3 kilos of bread at the time and freeze it for later. Sometimes I shape it in nice forms and cover it with "egg wash".

Ingredients for bread:
  • 1 kg of white wheat
  • 40 g of fresh yeast
  • 7 dl of warm water
  • 1 tablespoon sugar
  • 1.5 teaspoon of salt
Ingredients for "egg wash":
  • 3 tablespoons of rice milk
  • 1 tablespoon of olive oil
  • 0.4 teaspoon of turmeric powder
  1. Crush the yeast and mix it with one tablespoon of flour, sugar and 1 dl of warm water to form a yeast. Let the yeast rise in a warm place.

  2. Sift flour into a larger bowl and make a hole in the middle. Salt the flour along the edge and pour the yeast and some of warm water into the bowl.

  3. Mix the dough with a wooden spoon to from all the ingredients.

  4. Start kneading, first mixing all the ingredients by hand, then transfer the dough to a floured board and knead it with both hands. Knead the dough until it separates nicely from the board and hands.
  5. Cover with a clean cloth and leave to rise in a warm place for 30 to 40 minutes.
    Knead again and form a loaf of any shape of bread. Let it rise again in a baking tray covered kitchen cloth.
  6. Preheat the oven to 220⁰C. Cut the risen dough two or three times with a knife over the top. Boil three tablespoons of rice milk, a tablespoon of olive oil and 0.4 teaspoon of turmeric powder. Cool it down and cover your dough with it to get a nice eggy shine and softer crust. Sprinkle with some rock salt.
  7. Place in the oven and bake for 30 to 50 minutes (depends on how big your loafs are).
    Bread likes moisture, place a small low bowl of water on the bottom of the oven to get your bread soft.
    After about 10 minutes, lower the oven temperature to 180 degrees Celsius.
  8. Place the baked bread on a wire rack and cover with a napkin to cool.

Vegan Yogurt recipe:

I use silken tofu a daily, making Vegan Yogurt.
I use it for cooking, baking, or simply mix it with fresh, canned or dried fruits, spices or fruit powders and nuts or seeds.

Ingredients for Vegan Yogurt:

100 g of silken tofu
a tablespoon of lemon juice
a teaspoon of apple or white wine vinegar
a cup of soymilk

  1. Just blend all the ingredients together.
  2. Add any flavour you like.

Turmeric powder is really useful to fake egg color, I use it in cakes, pancakes, sauces, spreads... Just make sure you always boil it or bake it to relise the healing affects of turmeric. It is a wonderful medicine.
