Vegan Peach Cake

Peach cake with ice cream is most amazing on summer days. We didn't get any yet this year, but I still have a few jars from last year's canning.

Ingredients:

  • a jar of peaches
  • 230 g of all purpose flour
  • 2 teaspoons of baking powder
  • a pinch of salt
  • 65 g of coconut butter
  • vanilla extract
  • a tablespoon of apple cider vinegar
  • 2 tablespoons of sugar
  • a teaspoon of cinnamon
  • a pinch of nutmeg

Preparation:

  1. Drain the peaches. Save the liquid (you would need 180 ml).
    Heat up a pan, add peaches and sugar. Cook for about 3 minutes. Add nutmeg and cinnamon. Set aside.

  2. In a big bowl, mix flour, baking powder, salt. Add 65 g of melted and cooled coconut butter, apple cider vinegar and 180 ml liquid from the peaches (as the liquid is sweet we do not need to add more sugar). Mix until smooth, but don't over mix.
  3. Pour the mixture into the baking tray and add peaches on top.
  4. Place it in the oven at 180 ⁰C, for 35-45 minutes.
  5. Serve it with vanilla ice cream.

This is divine and reminds me of when I used to go to the annual peach festival where I grew up. We went straight to the peaches and ice cream stand.

I've had peach cobbler and peach pie, but I can say I've never seen a peach cake in my life. This looks delicious, and some vegan ice cream on top just seals the deal. Nice work as always chef.

This is a recipe I took out of my mother's cookbook. She titled is as 'Peaches' and there is only ingredients written and no instructions (I really love the simplicity here 😂), so I added a cake in the title.
I had to change the ingredient list a bit, skipped the eggs and use coconut butter instead of usual butter.
The cake was just as good as I remember. 😋

Yum! I need to give this a try!!!!

This one would be hard to regret! 😋
