Breads are one of my favorites food to have in breakfast and snacks. We Filipinos had several version of breads and pastries that is native in the Philippines and one of them is called Piaya.
Piaya is a flat bread that has a muscovado sugar filling. The way to cook is way too easy that anyone can do. On this recipe I chose to make it super flat lol. Hence at first I wanted to have a soft and chewy texture but I think I've done something wrong. Doing some adjustments on measurement can have a big effect not only on texture but towards the whole recipe. However I'd like the outcome of it, this texture can be compared to a thin crust type. Making pizza with thin crust is my favorite though so I will surely try to make another one this week.
Here is the simple and easy recipe of Piaya
Prepare the dough ingredients. 2 cups flour, 1/4 cup vegetable shortening, pinch of salt and water. The water is gradually added so you better be careful to stop yourself pouring water immediately.
Combine all of these and knead until all the ingredients are well incorporated. Rest the dough for half an hour and cover to prevent it from drying. While the dough is resting you can now do the filling.
Scoop 1 cup of flour, 1/2 cup of sugar and 2-3 tbsp of oil. Mix them together just like the dough process. If it feels a bit sticky of runny, you can add some flour when kneading it. Rest and cover also.
Once done by resting, you can cut the dough according to your own desire grams. I weigh mine 20 grams each and the filling was about 7 grams each. You must divide the filling according to the dough pieces that you have made.
Flat the dough using a rolling pin, add the filling and form a circle. Press it and roll again to flatten. Do the same procedure for the rest of the dough.
Prepare a non stick pan if you have but since I don't have teflon, I just pre-heated my pan and start to put 3 piaya and cover it. I toast it for 3 minutes both sides. I love it when I see them bloom like little bubbles. Make sure you toast it very well but not burnt.
