Last Harvested Cukes + Tomatoes (For Today's Lunch)

It is a very simple combination of sliced cucumbers, cherry tomatoes and spring onions..

Vinaigrette:
2 tbsps table vinegar,
1 pinch of salt,
dash of ground pepper,

dash of sugar (1 tsp.sugar substitute in powder form i.e.stevia) , garlic powder (optional). 2 tbsps. olive oil..

Combine vinaigrette ingredients and add to salad 15 minutes before serving.
