@tryskele - funny how comfort food takes us back to our childhoods? The lefsa remind me of the potato scones my father used to make - also with mashed potato. I still make them and looking at your recipe, the ingredients are about the same with the major difference being the thickness of the finished product. The scones are about 1 cm thick. Lathered with butter and salt and pepper.... soooo good.!
