The human, from remote times, after breathing, the first thing we did was to use our senses to get in touch with food and drink; although today I want to talk about a topic that I have been learning about for the past month and I have been very interested in the concept that has come to be given and thanks to that I started working in this place I have been given the opportunity to taste and know how to distinguish between aromas, bodies and bitterness.
Craft beer
We've all heard about it but, really, what do we know? Well, craft beer is the result of following a special recipe from each producer, in addition to focusing much more on the flavors and textures, therefore they are produced in small quantities.
Each type of beer has its own history which has taken it to where they are now, I would like to tell you a little about the beer that I think most of us have heard or tried.
IPA
Well, first of all, its characteristics: this beer is of high fermentation, because the yeast during the fermentation process remains on the surface of the liquid several days before being released to the bottom, it has a high level of bitterness and alcohol. Its amber color and its balance between bitterness, sweet and malty tone is what defines this style. In the mouth you can perceive notes of caramelized malts and bitterness that persist at the end of the drink.
This beer has its origin in England in the mid-eighteenth century, thanks to the fact that from England they sent beer to workers residing in Asia, but when they arrived, the beers arrived in a bad state, so they decided to add a little more hops to the formula, which gave a longer life to the beer and arrived in a good state to the different regions of Asia that were sent.
Today craft beer in Mexico (and around the world) is at its peak, there are many and varied types of IPAS, in the last month I have had to taste more than 10 different types of IPAS and for me it has been the Beer style that I liked the most, of course there is still a lot to know and learn.

El ser humano, desde tiempos remotos, después de respirar, lo primero que hizo fue utilizar sus sentidos para ponerse en contacto con los alimentos y la bebida; si bien hoy les quiero hablar sobre un tema del cual he estado aprendiendo durante el mes pasado y me ha interesado muchísimo el concepto que se le ha llegado a dar y gracias a que empecé a trabajar en este lugar se me ha dado la oportunidad de catar y saber distinguir entre aromas, cuerpos y amargores.
Cerveza artesanal
Todos hemos escuchado hablar de ello pero, en realidad qué es lo que sabemos? Bueno, la cerveza artesanal es el resultado de seguir una receta especial de cada productor, además de que se enfocan muchísimo más a los sabores y texturas, por lo tanto son producidas en pequeñas cantidades.
Cada tipo de cerveza tiene su propia historia la cual la ha llevado a donde estan ahora, me gustaria contarles un poco sobre la cerveza que pienso que la mayoría hemos escuchado hablar o hemos probado.
IPA
Bueno, primero que nada, sus características:esta cerveza es de fermentación alta, debido a que la levadura durante el proceso de fermentación se mantiene en la superficie del líquido varios días antes de desprenderse al fondo, tiene un alto nivel de amargor y alcohol. Su color ámbar y su balance entre el amargor, el tono dulce y maltoso es lo que define a este estilo. En la boca se pueden percibir notas a maltas caramelizadas y amargor que persisten al final del trago.
Esta cerveza tiene su origen en inglaterra a mediados del siglo XVIII surge gracias a que desde inglaterra mandaban cerveza a los trabajadores que residían en Asia, pero al momento de su llegada las cervezas llegaban en un mal estado por lo cual decidieron añadir un poco más de lúpulo a la fórmula, lo cual daba una vida más larga a la cerveza y llegaba en un buen estado a las distintas regiones de asia que eran mandadas.
Hoy en día la cerveza artesanal en México (y alrededor del mundo) se encuentra en su apogeo, existen muchas y muy variados tipos de IPAS, en el último mes me ha tocado degustar mas de 10 tipos diferentes de IPAS y para mi ha sido el estilo de cerveza que más me ha gustado, claro que aún queda mucho por conocer y aprender.
