If you read my last post you know that I tackled a low-carb, mostly carnivorous sponge cake. I was so pleased with the egg and collagen whip that I threatened to attempt low-carb, almost carnivorous meringue cookies. Guess what ... I did.

LC, Almost Carnivore Meringue Cookies

I found this traditional recipe from the food network and modified it by replacing the sugar with powdered collagen and adding some stevia drops.

Ingredients

3 large egg whites, at room temperature

2 teaspoons stevia

1/2 teaspoon of vanilla extract

1/8 teaspoon cream of tartar

3/4 powdered collagen

  1. Pre-heat the oven to 200

  2. Whip the egg whites, stevia, vanilla, and cream of tartar to a foam.

  3. Slowly add the powdered collagen tablespoon-wise (count to 15 between every spoonful)

  4. Whip mixture for a another 5 - 10 minutes until the mixture forms stiff peaks and has the texture of melted marshmellow

  5. Drop by the tablespoon onto a parchment covered cookie sheet (You can get fancy with a piping bag if you got the time. I decorated with some Christmas coloured chips I had lying around. )

  6. Bake for 45 minutes

  7. Turn off the oven and let the cookies stand inside for 30 minutes

  8. Let them cool before you store in a air-tight container

Reformation to Politique

Minime and I have been continuing on time travelling ... aka study of history and the consequences of the Reformation in England. .

From our studies ...

We take up our summary today of Reformation and Consequences: Crash Course European History with the death of Mary Tudor and the ascension to the throne of her half sister Elizabeth the 1st. John Green tells us that Mary's husband, Philip the Second of Spain, had difficulty giving up his power over the British Isles. He launched the famous Spanish Armada and set sail to return England to Catholic dominance and under his control.

With the help of marine storms, Elizabeth and her forces were able to defeat the Armada and keep England Protestant. Elizabeth then built up England's wealth and ruled under prosperity and as a religious moderate.

On the other hand, Philip drove Spain into bankruptcy. Wars are expensive. Also Spain, and many other European countries, learned that the appearance of vast amounts of New World Gold and Silver (currency) leads to drastic inflation. Everything became more expensive.

In France, the growth of Calvinism continued to erode the power structures of class and weaken the authority of royalty, clergy, and nobility.

Iconoclasm took root in French cities. Eventually France would fall to civil war. Gallicanism was a particular form of French Catholicism that arose in southern France and held that local government authorities should hold sway over French churches and not Papal Rome. Huguenots were the French Calvinists.

In 1562, a religious war broke out between the various religious and political factions. After the assassination of a group of nobles in 1572, thousands of Huguenots were killed in the St Bartholomew's Day Massacre. King Henry of Navarre, a Huguenot, escaped the massacre and joined forces with the Protestants and subsequently went over to the Catholic monarchy to defeat the more radical Catholic nobility faction. He later ascended to the French throne, as Henry the IV, and converted to Catholicism to secure his reign and obtain a coronation. However in 1598, Henry instituted the Edict of Nantes, making Protestantism legal is France. Like Elizabeth the First, Henry returned his country to peace and prosperity with religious moderation. Those leaders that put aside their own beliefs to work better solutions for their subjects came to the known as the politique and sow was born the term politician.
