Low Carb Peanut Butter Pucker-Up Cookies

IMG_4878 (3).jpeg

I love to bake almost carnivore cookies, cakes, and stuff. After a few years of trying I have come up with a carnivore flour that I can substitute into any tradition recipe from cakes to pies, muffins to cookies ... even sponge cake. Only one draw back. It is a labour intensive process. From mixing the batter; to lighly baking the batter, dehydrating it, and then grinding it into powder. Them baking it again into your recipe of choice. It is a labour of love because I love to bake, especially this time of year.

I am mid-process at the moment. I have the batter and pre-baked about half of it, but I will need one more day to finish baking and another to dehydrate.

But we need cookies now, says Minime. Sometimes you have to make exceptions to the almost carnivore element and just go low carb. The quickest and easiest way to make low-carb cookies is to open up a jar of peanut butter and scoop it onto a baking sheet and some parchment paper. It works. The cookies are a bit crumbly but they will give you that cookie feel.

I just so happened to have a 2/3 jar of peanut butter taking up space in the fridge. I added an egg, stevia drops to taste(maybe some vanilla), and about 4 scoops of collagen powder and 2 scoops of whey powder. I also snuck in some dark chocolate and butterscotch chips to make the low-carb a bit more marginal. Dark chocolate is generally low carb but the butterscotch not so much. I leave it to you to decide how sweet you want to make them. Now to get the pucker-up part suggested in the title, turn halved pecans sideways and then use the chips to make eyes and a nose. A warm treat for the house that is ready for a kiss.

Discussion on Art

From our homeschool studies ...

Art can be anything and anywhere, from framed paintings in a museum, to graphics in an advertisement, to an installation in someone’s front yard, or even the crocheted blanket from your grandmother on your bed. Art has been around for tens of thousands of years and is always changing though time and cultures. Art is for anyone who wants to experience it and anyone can define it. Everyone will define it differently. Most agree that art, however else you define it, changes the way you think and feel when you see it or experience it, but everyone will experience it differently.

Art gives people the opportunity to tell stories, record history, and tap into our emotions. For example, I like decorating for holidays because it makes me feel warm inside and closer to family. Many of our decorations and ornaments have special meaning and have been with us for a long time. We take pictures with our decorations and make memories and practice fun cultural and family traditions.

Another example was a art instillation outside of Urban Fare in Vancouver of work-out playground equipment. Not everyone might think of this installation as art, but using it changed the way people felt, making them feel happier. The installation was downtown and a bit of play surrounded by business. Personally, it reminded me of my trip of Spain because they had a lot of this type of playground.
