Super fluffy rainbow waffles 🌈🥞 [RECIPE included]

Hej!

Another food related post today. This rainbow waffle tower is a mess but in my eyes its a perfect mess! 😅Actually I think it tasted even better than it looked! 🤤 On the weekends it's so cool to have time in the morning to do creative stuff and eat a breakfast like this one. What did you have for breakfast today? 🥖🍅🍉🍩

Recipe is pretty simple:

  • 250g spelt flour
  • 250 ml soy milk
  • 100 ml sparkling water
  • 50g cane sugar
  • 1 tbsp baking powder
  • a pinch of salt
  • 1 tbsp neutral oil or coconut fat
  1. Mix the dry ingredients together first
  2. Add the wet ingredients
  3. Put a dipper full in your pre heated waffle iron
  4. Top it with different fruits. For example banana wheels, mixed wild berries or seasonal and local fruits.

The colors are from vegan food colorings. 🎨

That's a very pretty mess! I don't have a waffle iron, but I'm sure those would be fun as pancakes, too. :) I'll have to keep that in mind for when my niece is old enough to spend the night with me. I love special weekend breakfasts like this. Thanks for sharing!
