Ingredients for the salad:

  • few leaves of red chicory
  • 1 black tomato
  • 2 Roma tomatoes
  • 1 green tomato
  • a few yellow cherry tomatoes
  • a few red cherry tomatoes
  • 1 red pepper
  • 1 orange pepper
  • 1 green hot pepper
  • 1 carrot
  • 1 onion
  • nasturtium flowers, leaves and seeds
  • marigold flowers
  • a few twigs of thyme
  • a few leaves of parsley

Ingredients for the dressing:

  • 2 tablespoons of vegan mayonnaise
  • 3 tablespoons of vegan yogurt
  • 2 teaspoons of apple cider vinegar
  • 1 tablespoon of olive oil
  • 1 tablespoon of water
  • a pinch of salt
  • a teaspoon of dried herbs: dried nasturtium flowers, marjoram, oregano

Preparation:

  1. First, we make the dressing as it has to sit in a fridge for at least 20 minutes, so that the flavors equalize.
    Blend all the dressing ingredients in a food processor; mayonnaise, yogurt, vinegar, oil, water, salt and herbs. Let it sit in a fridge.
  2. Wash and slice chicory leaves. Slice peppers and onion. Cut tomatoes and carrots.

  3. Assemble the vegetables on the plate. Add nasturtium leaves and petals of marigold and nasturtium flowers. Add parsley and thyme leaves. Add a few nasturtium seeds.
  4. Mix the salad with the dressing and enjoy.

It's a work of art. I'm nourished at the sight of it. Just beautiful. I didn't know you could eat marigolds.
