Fake apple pie with salted caramel

This is a recipe for a simple and quick apple pie-flavored dessert.
I used homegrown frozen apples and tofu cream cheese in the recipe.

Ingredients for the crust:

  • 120 g vegan butter
  • 130 g of flour
  • 20 g of sugar
  • pinch of salt
  • vanilla essence

Preparation:

  1. Sift the dry ingredients through a sieve into a bowl. Stir well and slowly pour in the melted butter.

  2. When all the ingredients are combined, press the dough into the bottom of the baking tray.

  3. Put it in a preheated oven on 150 ⁰C, for 10 minutes.
  4. Take it out of the oven and put it aside. Turn the heat up to 200 ⁰C.

Ingredients for cream cheese:

  • 200 g of silken tofu
  • 1 tablespoon of sugar
  • juice of half lemon

Preparation:

  1. Blend all the ingredients until smooth.

  2. Pour it on the top of the crust.

Ingredients for apple filling:

  • 5 apples
  • 20 g of sugar
  • 2 tablespoons of flour
  • 1 tablespoon of apple vinegar
  • 1 teaspoon of cinnamon
  • a pinch of nutmeg

Preparation:

  1. If your apples are not homegrown, peel them. You can use fresh or unfrozen apples. Cut the apples using a mandoline.
  2. Add sugar, flour, vinegar, cinnamon and nutmeg and mix well.
  3. Spread apple filling evenly, on top of the cream cheese layer.

Ingredients for the pie crumble:

  • 50 g of flour
  • 50 g of walnuts
  • 20 g sugar
  • 40 g of vegan butter

Preparation:

  1. Mix all dry ingredients and slowly pour in the melted butter, as the dough crumbles.
  2. Cover the top of your pie with pie crumbs.
  3. Place it in the preheated oven on 200 ⁰C, for 30-35 minutes.

    When baked, take it out of the oven and leave it to cool down for one hour, then place it in a refrigerator for at least two hours.

Ingredients for salted caramel:

  • 100 g of sugar
  • 40 g of vegan butter
  • 70 ml of full-fat coconut milk
  • 0,5 teaspoon of salt

Preparation:

  1. Melt the sugar in a saucepan, while whisking.
  2. When it turns brown, add butter and whisk until smooth.

  3. When all melted and sooth, add coconut milk and cook on a low heat until it's all combined and smooth.
  4. Add sea salt and drizzle on top of the pie.

This is the kind of Apple Pie I would drive all the way across town for, pure perfection my friend @blackberryskunk! That nutty topping with the salted caramel must have been amazing, I'm sure this disappeared in no time at all, just yum! Well deserved win, congratulations my friend!
