Vegan Crepes For Qurator's Hive Top Chef!

I really like the thin version of it called crepes, that originates in France.
Today I prepared this easy vegan recipe with only very basic ingredients. This recipe is really handy when we can't really find a lot in our kitchen cabinet.

For this vegan crepes you will only need flour, vegan milk or water (I recommend sparkling water), salt and vegan butter or oil.
To get an egg color I used a bit of turmeric.
I used half buckwheat flour and half of spelt flour, to make it healthier and to add to the taste.
I served them with some homemade plum jam.

Ingredients:

  • half a cup of buckwheat flour
  • half a cup of spelt flour
  • a cup of sparkling water
  • half a cup of rice milk
  • a cup of sparkling water
  • 0.4 teaspoon of turmeric
  • a pinch of salt
  • a tablespoon of vegan butter

Preparation:

  1. Sift the flour through a sieve and add turmeric and salt.
    Slowly add sparkling water and rice milk, while whisking. The dough is ready when its all smooth.

    I like to leave it on the kitchen counter for a few minutes as the flour will expand and the dough becomes thicker and smoother. After about 10 minutes, whisk the dough again and add some more liquid if needed.

  2. Place your pan on the stove, on medium heat and wait until it gets very hot. Melt a little bit of butter, turning the pan in a circle, that the butter spreads through the surface. Pour some dough into the pan, while circling, making the dough spread very thin in the pan. When it's done on one side, turn it around using spatula, or just flip it in the air.

  3. Fill them up with chocolate, nuts, fruits, creams, jams or just anything you desire. I have been using plum jam this time, which is my favourite crepes filling.
