Coconut, Cherry, and Pistachio Semifreddo Review (vegan/vegetarian)

This is a photo of some of the semifreddo that I made.

Ingredients

The author seems to have forgotten to list all the ingredients, because later she instructs to add 2 drops of rose extract. At that point in the recipe I decided to not rush out and go buy the rose water. I used very expensive vanilla extract instead; so mine will probably taste different from hers. I think making it taste like rose would be a great idea. Mine tasted like coconut.

I used honey; so I guess it's not completely vegan the way I made it.

Pistachios are very expensive in South Africa; so I won't be making it like this often. I might substitute them for something else that is cheaper on a more regular basis, but I did use pistachios this time. Mine were salted as I could not find unsalted. It took a long time to shell half a cup of pistachios!

I bought glazed cherries as I couldn't find fresh cherries this time of year here. Taking out all the pits myself would have taken a long time anyway.

I think using one 400ml can of cream should be close to her 2×160g.

Experience

The dominant taste is coconut. There are subtle flavours of vanilla, cherry, and pistachio. They are really subtle though. I didn't realizes how mild a pistachio tastes before now.

I did love the idea of getting nutrients and healthy fats from food I don't often eat, pistachios and cherries. Thus I felt like I added good variety to my diet while enjoying a treat! As we all know, the more variety in a diet the more likely it is to be healthy.

I loved the colour combination of green and brown pistachio contrasted with bright red cherries in a creamy background of white coconut cream. The presentation is stunning!

The texture is also wonderful. If beaten properly, it comes out light and fluffy. I left it in my tiny, full freezer only for the minimum four hours and it came out a dream of soft chilled semifreddo. I didn't try to tip it out and the cut it; which is a bit silly because the presentation would have been even more fancy. The word semifreddo apparently means half frozen ; so I think I did it right.

I give this 5/10 for preparation time, 10/10 for easy beautiful presentation, and 7/10 for taste.
