Vegan dinner. Cauliflower fried "rice"

Hi all.

I'm sharing another vegan recipe I made tonight.

Cauliflower "fried rice". This uses cauliflower in place of rice and was surprisingly tasty!

The people down at the internet called it cauliflower rice, but I would compare it more to couscous.

I started by frying up some veggies. Carrot, garlic, cabbage, broccoli.

While that was cooking, I put the cauliflower pieces in my little food processor and ground it up

I added that to the veggies and stir fried it, and added a dash of soy sauce.

Then served with brussel sprouts and beets, for a delicious meal.

I have never been a fan of fried rice but love the cauliflower variation. So good!

Thanks Ronaldo. It's really easy and tasty! Add whatever veggies you like the best. Next Time for me I need to add mushrooms and onions.

I've been reading about the "riced" cauliflower and all the dishes it can be. I just feel like it would turn to mush so easily, I mean compared to rice.

It stayed nice and crisp. But I just fried it a bit

maybe some egg and green onion too.

Egg and green onion, and mushrooms as well would work well in it!

mushies are always good, green onions give that freshness. egg if you add it can be done a bunch of ways but not that vegan.

i got some sugestions to make it extra tasty if interested but im not trying to be like oh you needed to do this or that. just some stuff i have picked up.
let me know i got some ideas and questions on what you are limiting intake wise with your diet.

Also what u down to now? ima guess 230lbs...... am i close, wernt u at 275?

I was at 230 lbs about. My fattest was 250. And I'm down to about 175-180 now!

oh damn thats badass. depending how tall you are that doesnt sound over weight at all.
thats great you have dropped so much, mad respect on your will power to create a goal and reach it and even go beyond the goal you set.

This looks delicious and really healthy = ) I personally love beets and at first I actually thought that's real rice and the reality is its just cauliflower.I'd love to try this for sure. Thank you for the recipe !
