VNC requires you to know the IP and once you connect to your school wifi it auto grabs a random free IP.
im new to RPI as well but ive messed with it quite a bit so ill give my best opinion

1.Run your RPI at home and port forward on your router
2.Use SSH on your RPI instead of VNC (if your pi is headless theres no point to VNC)

  1. download WebSSH on your phone and connect to the pi (WebSSH is free on iphone)
  2. if this is for a school project then create a powerpoint on how it works!
