I really enjoyed reading your post and seeing the pictures.
I've seen Cappadocia on two TV documentaries fairly recently.
One was 'Ancient Aliens'.
The extent of the underground caves there are absolutely mind blowing. Room for 20,000 people and their livestock too. Wow!
That area has been on my bucket list for some time now. It's just a pity that the area around that part of the world is, politically speaking, a bit risky just now. Hopefully someday I will get there.
