Finally had the time to cook for lunch.
And today's dish of the day is.. Tinolang Manok!

Next to Nilagang Baboy, this is my favorite!

Tinolang manok is an authentic filipino dish but rumor has it that the origin of tinolang manok dates back to Song Dynasty in China. It is said that, "It was another food item that was developed due to cultural contact with China via trade routes between 960 and 1279."

Originally, Tinolang Manok is cooked with papaya, ginger and chili pepper, but with the flipping of calendar, the way it is cooked continues to evolve..

Today, people came up with many variations. Some still uses the old way of cooking it.

As for me, instead of using papaya, I used chayote and also added squash since it is our favorite.
