Vegan pancakes & homemade "Nutella" Recipe + Herbal tea (Lavender) | Restorative & Comforting Wednesday #1

This is a day that calls for some comforting and grounding time filled with pancakes, herbs and maybe even a cup coffee. Wednesdays. The middle day of the week. The day furthest away from the weekend.


Let us start with introducing:

Some Wednesdays we will share with you our most healing, comforting and even sometimes guilty-pleasure-like recipes. Everything from herbs, to healthy salads, and over to cakes is welcome here. As long as it gives some sort of well-being and feeling of the weekend to enjoy it; it is welcome at restorative & comforting Wednesday.

  • This day is from now on dedicated to healing and comforting, to take care of the body and spirit. We will post about anything that comforts us, along with a recipe.

  • On some Wednesdays we will spotlight an album (music) and some kind of artwork (painting, digital art, etc.), A herb we wanna spotlight + Maybe even a vegan recipe from a Steemit blog that we feel like deserves some attention, and revolves around the topic.

Some Wednesdays, like today, you can expect long post revolving around all these topics. And some Wednesdays we will make it shorter and share a post about healing, wellbeing and motivation.


Recipe: Vegan pancakes with Homemade "Nutella" + Herbal tea (Lavender).

This is an extremly comforting recipe. It is not the healthiest, but since the pancakes are made with natural sweetener (agave), the Nutella is made with hazelnuts and dark chocolate (obviously), I would say this is perfectly allowed on a Wednesday. Or any other day of the week.

For about 10 fluffy pancakes you will need:

  • 5 dl wheat flour.
  • 5 dl soy milk (sweetened or unsweetened).
  • 2 Tbs. Vinegar.
  • 1,5 Ts. Baking soda.
  • 1,5 Ts. Baking powder.
  • 1 Ts. Vanilla.
  • 4 Tbs. sugar or 3 Tbs. Agave syrup.
  • 5 Tbs. Vegan butter or oil (sunflower or rapseed works great).

-Mix the soy milk and vinegar in a bowl and let it sit for at least 10 minutes to thicken.
-Melt the vegan butter or set the oil aside.
-Meanwhile, mix all the dry ingredients in another bowl.
-Add the wet to the dry ingredients, whisk, and stir in the melted butter or oil.

Fry the pancakes on medium heat for about 2 minutes on each side.

Enjoy!


Topping / Nutella :


  • 2 Cups hazelnuts.
  • 100 g dark chocolate.
  • Sea salt.
  • Agave syrup.
  • Real vanilla powder.

-Roast the hazelnuts in the oven on 175 C for about 10 minutes. This heats up the natural oils and lets the skin come off more easily. I placed my hazelnuts inside a kitchen paper and rolled it around. The more skin you remove from the hazelnuts, the creamier your Nutella will turn out. )You do not have to remove every little bit of skin, it will turn out amazing anyway!)

Blend the hazelnuts in a food processor or blender. You will have to spend some minutes doing this, and stop to scrape down what sticks to the side a few times. It will seem like at first that the nuts only crumble, but be patient and keep blending and you will be awarded the creamiest hazelnut-butter. When the nuts are creamy and blended, you add in your chocolate, agave syrup, vanilla, and a pinch of sea salt.

To make it sweeter, add more agave syrup. I like to use about 2 tbs. This doesn't make the sweetest Nutella, but I like to top my pancakes with both chocolate and syrup, so I'll save the rest of the syrup for the pancakes. If you wanna make it lighter, add some tablespoons of your favorite plant milk.

Herb of the week: Lavender!

Let us start with a well known and loved herb; Lavender.

Lavender is known for stress relieving abilities. It can treat headaches, better your sleep and help you relax. An antioxidant boosting herb with a calming and clean smell.

Lavendula is about 47 species in the family mint. It grows in many different places, countries, and altitudes.

In magic, it is used for cleansing, and other common uses are
to make tea and burn incense, among many.
They smell amazing and have many healing and restorative properties.

To make a healing Lavender tea, place some of the dried or fresh leaves in your tea infuser, and add to a cup with some boiled water (that cooled down just a bit.) Wait a few minutes, and enjoy!
Tip: Add some foamed oat milk for a Lattè!

We feel like a restorative and comforting day is just not complete without enjoying the creative presence of music and art. So we thought Wednesdays would be a great day to share with you our favorite tunes to chill out and cook, write and make art to. Along with our favorite art pieces that you can stare at for hours and fall into deep meditation by looking at.

To us, music and art are creative interests equal to, or beyond cooking, writing, and magic.
Universal languages are what makes an understanding between people beyond words. The act of pure communication beyond borders, personality types and even species.

This is one of my favorite art pieces in the world. I love it so much, I have it hanging all over my bedroom wall! I can stare at it for hours and still find new details, patterns and new ways the lines are overlapping and connecting.

I thought that Id share an album that I listen to when the day calls for some healing and chilling out, and when taking a break from reality is very much needed.

This is one of my favorite albums to listen to while I do yoga, make art and cook.When I need to chill out, I put on this album. It is full of good energy and ethnical vibes that takes me back to my travels.
