healthy yummy vegan energy balls <3

I decided to make some healthy treats for my loved ones for easter. These energy balls are super easy and I haven't met anyone who hasn't liked them.

The Recipe

1 cup pitted dates
1 cup of almonds
2 tablespoons of pure raw cocoa powder
1 pinch of salt
unsweetened desiccated coconut for decoration

Soak the dates in lukewarm water for a few minutes. Press out the water until the dates are realtively dry. Put the almonds in a food processor and ground them (be careful not to do that for too long - we don't want to make almond paste out of them ;-) ). Put the dates, cocoa powder and salt into the food processor and process until the mixture starts to stick on the sides.
Then take a bit of the mixture, roll it into a ball and roll it in the desiccated coconut.

You can be very creative with the ingredients, you can substitute the almonds with any other nut and the dates with any other dried fruit you like. For example dried cherries and hazelnuts or replace half of the almonds with walnuts to get a more brownielike taste.
Or a more tropical flavour by using dried mangos and cashews and skipping the cocoa powder.

I would love to hear from you if you try out the recipe or if you come up with other combinations.

Also Bananen, Haferflocken, gemahlene Nüsse ... yippie ya yay :D
Ich hoffe, ich finde die Zeit dafür.
