Spicy-Noodle-Salad

🌱💚 Vegan food is boring? No!

ingredients

  • Glass noodles (the thicker ones)
  • 2 carrots
  • 2 pointed peppers
  • 150g celery sticks
  • 5 walnuts
  • 15 roasted peanuts
  • 1/2 bunch coriander

ingredients for the sauce

  • 1cm ginger
  • 1 clove of garlic
  • 1 1/2 tbsp peanut butter (unsweetened)
  • 1 tbsp Tajin (session paste)
  • 1/2 tsp green curry paste
  • 2tsp soy sauce
  • 1 1/2 tbsp sesame seeds (optional)
  • 1/2 tbsp agave syrup
  • 1-2 tsp vegetable broth
  • 70 ml of cold water

preparation

Cut the carrots and peppers into 2cm fine strips. Cut the celery into 1cm wide pieces. Finely chop the coriander and walnuts.

For the sauce, chop the garlic and ginger very finely. Who likes to roast sesame in a pan so that it turns slightly brown. Mix all ingredients in a glass or bowl.

Cook glass noodles according to package instructions. Make sure they don't get too mushy.

Mix the vegetables and noodles together. Pour the sauce over and garnish with the nuts and coriander. Finished!
