in #vegetarian8 years ago (edited)

I love vegetable soup - are healthy, full of valuable for our body's nutritional value, and this filling and delicious. Even more I love experimenting in the kitchen and learn new tastes - hence the seemingly odd combination of asparagus and peppers. As it turned out - surprisingly delicious! I invite the recipe! 😊

Thick, creamy, delicate yet distinctive taste, simply delicious. What more could you want from soup? Try necessarily this invention! For me, everyone in the household delighted to guarantee that from you will be no different. 😊

Components:

• 500g green asparagus
• 1 large red bell pepper
• 3 medium potatoes
• 3 small onions
• 3 small cloves garlic
• teaspoon coconut oil (for frying the onions and garlic)
• Soup vegetables (parsley 2 small, 2 carrots, a little piece of leek, celery ¼)
• 4 cubes frozen spinach (for a deeper color)
• 1.5 liters of water
• Seasonings to taste, seasoned 😊 - sea salt, pepper, a few large fresh basil leaves (dried will work too), a small bunch of parsley, thyme and sweet peppers

Here we go... 💪 💪 💪

1. In a large pot Warm up coconut oil. Add the chopped onion and fry a minute. At the end, we add the garlic and fry together for a while.

2. Pour into a pot 1.5 liters of water, add the greens and whole potatoes, cut into large cubes and cook for the whole 15 minutes.

3. At this time, Dice the peppers and prepare asparagus - get rid of the woody ends and cut into 3 parts, the head, leaving for later (they are soft, add them at the end). After 15 minutes, add the broth spinach, asparagus without heads and pepper and cook for another 10 minutes.

4. Then add the asparagus heads and spices (not regret them, it is they give the full flavor soup), mix thoroughly and cook for another 5 minutes on low heat.

5. Let stand for a minute to cool, so that the soup was not boiling, then blendujemy whole thoroughly cream. At this stage, we check if the flavor is expressive enough for us, if not - we add a little more spice. We can decorate a bit of natural yoghurt and you're done! 😇

Left only gorge on the soup without any consequences - it's the same veggies! 🍲 🍲 🍲 🍲
