Instructions

1- Preheat the Pot:

  • Heat 2-3 tablespoons of olive oil over medium heat in a large aluminum cooking pot.

2- Sauté Aromatics:

  • Add 5 chopped garlic cloves and stir until they reach a light golden color.
  • Add 1 chopped onion, sauté until translucent.
  • Add 1 chopped green bell pepper, sauté for approximately 2 minutes.

3- Add Offal:

  • Add the prepared offal mix to the pot.
  • Stir gently to combine with the sautéed aromatics.

4- Season the Dish:

  • Sprinkle ½ tablespoon of Calabrian pepper, 1 tablespoon of mixed seasoning, ½ tablespoon of ground black pepper, and 1 tablespoon of annatto powder.
  • Add salt to taste.
  • Stir well to evenly coat the offal with spices.

5- Simmer and Meld Flavors:

  • Cover the pot and let it simmer on medium-low heat for about 5 to 10 minutes.

6- Herbs and Broth:

  • Uncover and add 3-4 bay leaves, a generous amount of chopped cilantro, and chives.
