Ingredients
🐔 1.5 kg of chicken, cut into pieces including wings, drumsticks, thighs, and back
🍃 200-300g Ora-Pro-Nobis leaves, fresh and washed
🧅 1 medium onion, diced
🧄🥄 Generous spoonful of homemade seasoning paste made from garlic, salt, chives, parsley, onion, and coriander stalks
🫒 3 tablespoons olive oil
💧 Water enough to create a broth
🌿 Freshly chopped parsley/chives, cheiro verde for garnish
Instructions
1- Prepare Chicken:
- Rinse and cut the chicken into desired pieces. Place them in a large metal mixing bowl.
2- Season Chicken:
- Add a generous spoonful of your homemade seasoning paste to the chicken in the bowl. Mix thoroughly to coat every piece. Allow it to rest for about 15-30 minutes for the flavors to infuse.
3- Sauté Onion:
- Heat olive oil in a Santana cast iron pot over medium-high heat. Add half of the diced onion and sauté until deeply browned and caramelized, enhancing flavor depth.
4- Brown Chicken:
- Incorporate the seasoned chicken into the pot with the browned onion. Sauté the pieces, turning occasionally, until lightly browned and starting to release their juices.
5- Simmer Chicken:
- Add enough water to just partially cover the chicken, creating a broth. Cover the pot with a lid and reduce the heat to let it simmer until the chicken is tender and the sauce thickens.
6- Prepare Polenta:
- While the chicken is simmering, prepare a soft polenta following your preferred recipe for a creamy accompaniment.
7- Add Ora-Pro-Nobis:
- Once the chicken is cooked through, add the Ora-Pro-Nobis leaves on top of the chicken, ensuring they are spread evenly.
8- Wilt Ora-Pro-Nobis:
- Cover the pot again, turn off the heat, and let the dish rest for about 5 minutes. The residual heat will gently wilt the Ora-Pro-Nobis leaves.
9- Garnish and Serve:
- Uncover the pot and garnish the stew with freshly chopped parsley/chives. Serve with the prepared polenta, placing chicken and wilted leaves over the polenta and drizzling with sauce.
