Instructions

1- Prepare the Pita Chips:

  • Begin by cutting the two pieces of pita bread into bite-sized pieces.
  • Fry them in a pan with oil until golden brown, or alternatively, you can air-fry them for a healthier option. Set aside to cool.

2- Prepare the Dressing:

  • In a small bowl, combine the juice from one lemon, olive oil, dried mint, pomegranate molasses, and salt.
  • Whisk everything together until well combined. Set aside to allow the flavors to meld.

3- Assemble the Salad:

  • In a large salad bowl, combine the chopped lettuce, diced tomatoes, diced cucumber, shredded red cabbage, shredded carrots, and thinly sliced red onion.
  • Give the vegetables a gentle toss to mix.

4- Add Dressing and Pita Chips:

  • Pour the dressing over the mixed vegetables and toss to ensure everything is evenly coated.
  • Add the pita chips on top and gently mix them into the salad.

5- Garnish and Serve:

  • Sprinkle chopped parsley over the salad for a burst of color and freshness.
