Ingredients

🥫 2 cups canned chickpeas (drained and rinsed)
🌿 1 cup fresh parsley (finely chopped)
🧅 1 small onion (finely chopped)
🧄 2 cloves garlic (minced)
🥚 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
🍞 1/2 cup breadcrumbs
🌶️ 1 teaspoon smoked paprika
🌱 1 teaspoon ground cumin
🧂 1/2 teaspoon salt
🫒 2 tablespoons olive oil (for frying)


Instructions

1- Prepare the Flax Egg:

  • In a small bowl, mix 1 tablespoon of ground flaxseed with 3 tablespoons of water.
  • Let it sit for about 10 minutes until it becomes gelatinous.

2- Mash the Chickpeas:

  • In a large bowl, mash the chickpeas using a fork or a potato masher.
  • Leave some texture for added bite.

3- Mix Ingredients:

  • Add the chopped parsley, onion, garlic, flax egg, breadcrumbs, smoked paprika, cumin, and salt to the mashed chickpeas.
  • Mix until well combined.

4- Shape the Patties:

  • Divide the mixture into 8 equal portions.
  • Shape each portion into a patty.

5- Cook the Patties:

  • Heat olive oil in a large skillet over medium heat.
  • Fry the patties for about 4-5 minutes on each side, or until they are golden brown and crispy.
