Ingredients
🧀 750g Brancourts Classic Cottage Cheese
🧀 1 ½ cup finely grated Parmesan Cheese
🌿 ½ cup Pesto
🌿 1/3 cup Vegetable Stock
🧂 A good pinch (approx. 1/2 tsp) Salt
🌶️ A little (approx. 1/4 tsp) Pepper
🫒 4 tbsp Extra Virgin Olive Oil
🥬 1 Leek, washed well and finely sliced
🧄 3 cloves Garlic, roughly chopped
🥬 ½ bunch Kale, roughly chopped
🌈 ½ bunch Rainbow Chard or Silverbeet, roughly chopped
🍝 4-6 Fresh Lasagne Sheets
Instructions
1- Prepare the Cottage Cheese Mixture:
- In a large mixing bowl, whisk together Brancourts Cottage Cheese, half of the grated parmesan, half of the pesto, vegetable stock, and a little pepper until smooth.
- Set aside.
2- Sauté the Aromatics and Greens:
- Heat a large enamel-coated cast iron Dutch oven-style pot over medium-high heat.
- Add 2 tbsp of extra virgin olive oil.
- Sauté the sliced leek and chopped garlic for 2-3 minutes until fragrant and translucent.
3- Wilt the Greens:
- Add the chopped kale and rainbow chard to the pan along with a good pinch of salt.
- Cover the pan with a lid and cook for 4-5 minutes, stirring occasionally, until the greens are wilted.
- Set aside to cool slightly.
4- Preheat Oven:
- Preheat your oven to 220°C (425°F).
5- Assemble the Lasagne:
- In a Le Creuset 40cm x 30cm baking dish, spread 1/3 of the cottage cheese mixture evenly on the bottom.
- Layer half of the cooked greens over this base, followed by a sprinkle of parmesan cheese.
- Arrange lasagne sheets on top of the greens.
- Repeat the layering process: cottage cheese mixture, remaining greens, more parmesan, and another layer of lasagne sheets.
- Finish with the remaining cottage cheese mixture and a generous sprinkle of parmesan cheese.
6- Bake the Lasagne:
- Drizzle the remaining olive oil over the top of the lasagne.
- Bake in the preheated oven for 30-35 minutes until golden brown and bubbly on top.
7- Final Touch:
- Drizzle with extra virgin olive oil and a sprinkle of black pepper before serving.
