For the Gravy:
🥄 2 tablespoons lamb drippings
🧅 1/2 cup onion, finely chopped
🧄 2 cloves garlic, chopped
🌾 1 tablespoon flour
💧 1 cup water
🧂 1 teaspoon garlic salt
🧅 1 teaspoon onion powder
🌿 1 teaspoon rosemary, chopped
🌿 1 teaspoon thyme, chopped
⚫ 1 teaspoon black pepper
🌿 1 tablespoon parsley, chopped


Instructions

1- Prepare the Lamb Chops:

  • Rub the lamb chops with garlic paste, rosemary, thyme, cilantro, garlic salt, onion powder, paprika, and black pepper.
  • Let them marinate for at least 30 minutes in the refrigerator.

2- Cook the Lamb Chops:

  • Preheat your skillet over medium-high heat.
  • Add the marinated lamb chops and cook for about 4 minutes on each side until they get a golden sear and reach your desired doneness.
  • Remove the chops from the skillet and set aside.

3- Make the Asiago Mashed Potatoes:

  • Boil the potatoes in salted water until tender, about 20 minutes.
  • Drain and return to the pot.
  • Add butter, minced garlic, cream cheese, heavy cream, Asiago cheese, parsley, garlic powder, onion powder, sea salt, and pepper.

  • Roast in the oven at 200°C (390°F) for about 10-12 minutes until tender-crisp.

5- Make the Gravy:

  • Use the same skillet with lamb drippings, add onion and chopped garlic, and sauté until translucent.
  • Stir in flour and cook for a minute.
  • Gradually whisk in water, garlic salt, onion powder, rosemary, thyme, black pepper, and parsley.
  • Simmer until thickened, stirring occasionally.

6- Serve:

  • Plate the lamb chops, and drizzle with gravy.
  • Serve with a side of creamy Asiago mashed potatoes and roasted asparagus.
