Ingredients

🥩 1 lb flank steak, sliced thinly
🌶️ 1 red bell pepper, sliced

🌶️ 2 tablespoons chipotle peppers in adobo sauce
🧅 1 large onion, sliced
🌿 1 teaspoon adobo seasoning
🥄 1 teaspoon cumin
🌶️ 1 teaspoon paprika
🧄 1 teaspoon garlic powder
🧅 1 teaspoon onion powder
🌿 1 teaspoon dried oregano
🧂 Salt and pepper to taste
🫒 2 tablespoons olive oil
🌮 Fresh tortillas
🌿 Fresh pico de gallo for serving


Instructions

1- Prep the Ingredients:

  • Slice the flank steak thinly against the grain.
  • Slice bell peppers and onion.

2- Seasoning:

  • In a small bowl, mix the adobo seasoning, cumin, paprika, garlic powder, onion powder, dried oregano, salt, and pepper.

3- Marinate the Steak:

  • In a large bowl, toss the sliced steak with half of the spice mix and the chipotle peppers in adobo sauce.
  • Make sure the steak is evenly coated. Let it marinate for at least 10-15 minutes.

4- Cook the Steak:

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the marinated steak to the skillet in a single layer. Avoid overcrowding the pan; cook in batches if necessary.
  • Sear the steak for about 3-4 minutes on each side. Remove the steak from the skillet and set aside.

5- Cook the Vegetables:

  • In the same skillet, add the remaining olive oil, then add the sliced onions and bell peppers.
  • Sprinkle the remainder of the spice mix over the vegetables and sauté for about 5-6 minutes, until the peppers are tender-crisp.

6- Combine Ingredients:

  • Return the cooked steak to the skillet with the vegetables and toss everything together.
  • Cook for another 2 minutes to combine flavors.

7- Serve:

  • Serve the steak and pepper mixture on fresh tortillas and top with fresh pico de gallo. Enjoy!
