Experience the delicious flavors of Mexico with these Soft Taquitos, filled with perfectly seasoned shredded beef and topped with a smoky homemade salsa. This recipe offers a comforting and satisfying meal that is perfect for a casual weeknight dinner or a festive gathering with friends and family.

Ingredients:

For the Shredded Beef:
🥩 3 lbs beef eye round roast
🧄 2 cloves garlic
🧅 Small piece of onion
🧂 Salt to taste
🌶️ Black pepper to taste
🌿 Pinch of cumin
🌿 Pinch of Mexican oregano
💧 2 cups water
For the Salsa:
🍅 2 tomatoes
🌶️ 20 chile de árbol (optional: 10 for less heat, no stems)
🌶️ 5 guajillo peppers (no seeds or stems)
🧄 2 cloves garlic
🧅 1/4 onion
🧂 Salt to taste
For the Tortillas:
🌽 Corn tortillas
🥄 Vegetable oil


Instructions:

  1. Prepare the Beef:
    • Instant Pot Method: Place the beef, garlic, onion, salt, black pepper, cumin, Mexican oregano, and water in the Instant Pot. Cook on high pressure for 30 minutes. Check for tenderness; if the meat doesn't shred easily, cook a little longer.
    • Oven Method: Preheat the oven to 375°F (190°C). Place beef and seasoning in an oven-safe dish with a lid. Cook for up to 3 hours or until the meat is tender.
    • Stovetop Method: Boil the seasoned beef in a pot with enough water to cover on medium heat for about 2 hours. Keep the lid on and check for tenderness periodically.
  2. Make the Salsa:
    • Broil or char the tomatoes, chile de árbol, and guajillo peppers until they are blackened and smoky.
    • In a pot, add the charred ingredients, garlic, and onion. Cover with water, bring to a boil, and cook for 10 minutes or until tender.
    • Blend everything with some of the cooking liquid from the pot. Season with salt to taste.
  3. Prepare the Tortillas:
    • Heat a small amount of oil in a skillet over medium heat. Quickly fry each tortilla for about 10 seconds per side; they should be warm and pliable, not crispy.
  4. Assemble the Taquitos:
    • Shred the cooked beef and place a generous amount on each tortilla. Roll tightly into taquitos.
    • Serve warm taquitos with a spoonful of freshly made salsa on top. Enjoy!

Cooking Tips:

  • For extra flavor, add a splash of lime juice to the beef before cooking.
  • Garnish taquitos with fresh cilantro, sour cream, or avocado for added freshness.
