Ingredients
🫒 2 tablespoons Maresi oil
🧅 1 medium-sized onion
🌿 1 bay leaf
🥕 1 medium carrot (can use frozen diced carrots)
🌿 1 stalk celery or a piece of celeriac
🥔 1 potato
🥣 1/2 cup rolled barley (formerly contained in Süd Milch Sauerrahm cup)
🥤 1.5 liters broth (beef or vegetable; shown in a glass jar)
🥓 1-2 slices smoked meat (bacon and smoked sausage)
🧂 Salt
🧂 Freshly ground pepper
🌿 Celery leaves or parsley for garnish
Instructions
1- Prepare Vegetables:
- Finely dice the onion, celery, and carrot.
- Peel and cube the potato into 1cm pieces.
- Reserve some celery leaves for the garnish.
2- Sauté Aromatics:
- Place a 3-liter pot on an electric stovetop.
- Heat the Maresi oil and add the onions, stirring until golden brown.
3- Add Celery and Broth:
- Incorporate the diced celery.
- After a brief sauté, pour in the broth and add the bay leaf.
4- Cook Barley:
- Bring the mixture to a boil, add the barley, and simmer for 30 minutes, stirring occasionally.
5- Prepare Potatoes and Carrots:
- Cube the carrot and potato if not pre-diced. Set aside.
6- Dice Smoked Meat:
- Cut the bacon and smoked sausage into small cubes.
7- Complete Cooking:
- After 30 minutes, check barley's tenderness.
- Add potatoes and carrots, bringing the mixture back to a boil.
- Adjust consistency with more broth if needed.
8- Season the Soup:
- Incorporate salt and pepper, continue simmering for 10-15 minutes until vegetables are tender.
9- Add Smoked Meat:
- Stir in the diced smoked meat and heat through.
10- Garnish and Serve:
- Sprinkle fresh celery leaves or parsley on top.
- Serve warm.
