Ingredients
🌾 400g Glutinous Rice Flour 영월농업 / Yeongwol Nongup, 100% domestic glutinous rice
💧 2 tablespoons Water 20mL
🍬 2 tablespoons Sugar
🌰 2 tablespoons Roasted Soybean Powder
Instructions
1- Prepare the Flour:
- Place 400g of glutinous rice flour into a large metal mixing bowl.
- Gradually add 2 tablespoons of water, mixing by hand to moisten. The flour should hold its shape when compressed.
2- Sieve the Flour:
- Pass the moistened flour through a fine-mesh sieve into a clean bowl to ensure a lump-free texture.
3- Set Up the Steamer:
- Place a steamer basket into a pot filled with boiling water. Turn off the heat temporarily.
- Line the steamer with a silicone mesh mat and sprinkle 1 tablespoon of sugar to prevent sticking.
4- Steam the Cake:
- Gently add the sieved flour into the steamer in small lumps, creating a few holes to allow steam circulation.
- Cover with a cotton cloth and the steamer lid. Steam on high heat for 10 minutes.
5- Prepare for Kneading:
- While steaming, wear a thick cotton glove and a plastic glove secured with a rubber band.
6- Knead the Dough:
- Turn off the heat and transfer the steamed cake into a plastic bag on a metal tray.
- Knead inside the bag while hot, until the dough is smooth and elastic. If needed, add sugar and continue kneading.
7- Coat with Soybean Powder:
- Remove from the bag, place onto a tray dusted with soybean powder, and shape into a rectangle. Coat thoroughly.
8- Cool and Cut:
- Let it cool for 20-30 minutes, then cut into bite-sized pieces.
