Ingredients

🧅 2 medium-sized red onions, preferably organic for the best flavor

🧂 1 teaspoon white salt, any brand


Instructions

1- Prepare the Onions:

  • Trim and peel the red onions.
  • Remove both ends and the outer skin.

2- Slice the Onions:

  • Use your chef's knife to thinly slice the red onions into rings or half-rings.
  • Aim for uniform thinness to ensure even marination.

3- Marinate the Onions:

  • Transfer the sliced onions to a glass bowl.
  • Add approximately 1/2 cup apple cider vinegar, ensuring the onions are partly submerged.
  • Pour over 1-2 tablespoons of coconut oil and sprinkle with 1 teaspoon of salt.
  • Mix thoroughly to coat, then let the onions marinate for about 15-20 minutes.

4- Heat the Pan:

  • Place the frying pan on the stovetop at medium heat.
  • Add a small amount of the remaining coconut oil, allowing it to warm up.

5- Cook the Onions:

  • Carefully add the marinated onions and their liquid to the heated pan.
  • Use the tongs to distribute the onions evenly.

6- Increase Heat:

  • Switch the stovetop to high heat.

7- Sauté the Onions:

  • Regularly stir the onions until the vinegar has evaporated and they become tender and translucent.
  • Aim for soft yet textured onions with some liquid residue.

8- Serve:

  • Transfer the finished escabeche back to a serving bowl.
  • It's now ready to add a zesty kick to your meal.
