Ingredients

🥔 1 kg Potatoes, 6-8 medium
🧅 2 Yellow Onions
🐟 400 g Norwegian Salmon Fillets, Brand: Norwegian Salmon
🌿 1 cup Dill, finely shredded
🍋 1 Lemon
🧈 100 g Butter
🥚 4 Eggs
🥛 4 dl Milk
🧂 Salt, to taste, approximately 1-2 tsp
⚪️ White Pepper, to taste, approximately 0.5 tsp


Instructions

1- Prepare Ingredients:

  • Slice the potatoes thinly.
  • Finely shred the onions.
  • Chop the dill finely.
  • Cut the salmon fillets into desired pieces.

2- Sauté Onions:

  • In a frying pan, melt a portion of the butter.
  • Sauté the onions over medium heat until they become soft and translucent, approximately 1 minute.

3- Prepare Egg Mixture:

  • In a mixing bowl, whisk together the eggs.
  • Gradually add the milk, salt, and white pepper to the eggs, whisking until completely blended.

4- Assemble the Pudding:

  • Grease an oven-safe baking dish generously with the remaining butter.
  • Layer the sliced potatoes at the bottom of the dish.
  • Add a layer of sautéed onions, followed by a layer of salmon pieces and a sprinkle of dill.
  • Ladle some of the egg and milk mixture over the layers.
  • Repeat the layering process—potatoes, onions, salmon, dill, and egg mixture—ending with a potato and onion topping.

5- Bake:

  • Preheat your oven to 200°C (392°F).
  • Bake the assembled dish for 60 minutes until it is set and the top is golden brown.

6- Serve:

  • Pour melted brown butter over the pudding for a luscious finish.
  • Accompany with lemon slices, green peas, or a fresh green salad.
