Ingredients
🍤 340g Cooked Wild Atlantic Cold Water Shrimp, peeled (President's Choice)
🧅 2 tablespoons Red Onion, finely diced
🍋 1 tablespoon Fresh Lemon Juice, from 1 whole lemon
🌿 1 tablespoon Fresh Dill, finely chopped, plus extra sprigs for garnish
🧂 1/4 teaspoon Salt
⚫️ 1/4 teaspoon Black Pepper
🌶️ 1/8 teaspoon Cayenne Pepper
🥄 2 tablespoons Mayonnaise (Brand: Not specified)
🥛 1-1/2 tablespoons Crème Fraiche or Sour Cream (Brand: Not specified)
🥖 1 whole Baguette, sliced into 5-6 pieces for toast
🧈 2-3 tablespoons Butter
🧄 1-2 Garlic Cloves, for infusing flavor into the toast
🥑 1/2 medium Avocado, sliced
🍤 2-3 pieces Whole Cooked Shrimp for garnish
🍋 1 Lemon Wedge for garnish
Instructions
Thaw and Prep:
- Thaw the shrimp in the refrigerator until thoroughly defrosted. Pat the thawed shrimp dry using paper towels to remove excess moisture.
Marinate Onion:
- Dice the red onion finely and combine with lemon juice in a small bowl. Let this mixture marinate for 15 minutes to soften the onion's flavor.
Prepare Shrimp Mixture:
- Chop the shrimp into small, bite-sized pieces and transfer them into a large mixing bowl.
- Add the marinated onion and lemon mixture, along with the chopped dill, into the shrimp.
- Season with salt, black pepper, and cayenne pepper.
- Mix in the mayonnaise and crème fraiche (or sour cream) until everything is well combined and creamy.
Toast Baguette:
- Slice the baguette into pieces about 1/2 inch thick.
- Melt butter in a frying pan over medium heat. Add garlic cloves to the pan.
- Place the baguette slices into the pan and rub them gently against the garlic cloves for flavor. Toast until golden brown and crispy on both sides. Remove and set aside.
Assemble Toasts:
- On a serving board, lay a toasted baguette slice.
- Place avocado slices on each toast, then add a generous spoonful of the shrimp mixture on top.
- Garnish with a dill sprig, a lemon wedge, and a couple of whole cooked shrimp.
Serve:
- Serve the toasts immediately while the bread is still warm and crisp. Enjoy as an appetizer, a party snack, or a light lunch.
Prep Time: Approximately 15-20 minutes
Cook Time: Approximately 4-8 minutes
Total Time: Approximately 20-28 minutes

Cooking Tips
- Allowing the onion to marinate in lemon juice reduces its sharpness.
- Fully drying the shrimp post-thawing prevents excess moisture and provides a better texture.
- Rubbing the bread with garlic while toasting gives a subtle garlic hint without overwhelming the dish.
