Instructions

1- Prepare the ingredients:

  • Clean and chop the seafood, ensuring all shells and inedible parts are removed.
  • Prepare all vegetables by chopping and dicing as specified.

2- Sauté the aromatics:

  • In a large stockpot or Dutch oven (e.g., Le Creuset), heat olive oil over medium heat.
  • Add the onions and garlic, sauté until fragrant and onions are translucent.

3- Cook the vegetables:

  • Stir in the carrots, potatoes, bell pepper, and tomatoes. Cook for about 5 minutes, allowing the vegetables to soften.

4- Create the broth:

  • Pour in the water or fish stock. Add the bay leaves, salt, black pepper, and paprika. Bring to a gentle boil.
