Spiced Besan Chilla (Chickpea Flour Pancakes)

Ingredients
🥄 5 tablespoons besan (chickpea flour)
🌿 1 teaspoon cumin seeds (zera)
🧂 1 teaspoon black salt
🌱 1 teaspoon coriander seeds
🌿 1 teaspoon carom seeds (ajwain)
🛢️ 1 tablespoon oil
Instructions
1- Prepare the Batter:
- In a mixing bowl, combine 5 tablespoons of besan with 1 teaspoon of cumin seeds, 1 teaspoon of black salt, 1 teaspoon of coriander seeds, and 1 teaspoon of carom seeds.
- Gradually add water to the mixture and whisk until you achieve a smooth batter. The consistency should be similar to that of pancake batter, not too thick or too runny.
2- Heat the Pan:
- Place a non-stick skillet or tawa on medium heat and add a small amount of oil to grease it lightly.
3- Cook the Chilla:
- Once the pan is hot, pour a ladleful of the batter onto it.
- Gently spread the batter in a circular motion to form a thin pancake.
- Drizzle a few drops of oil around the edges of the chilla.
4- Flip and Cook:
- Cook the chilla for 2-3 minutes until the edges begin to lift and the bottom turns golden brown.
- Carefully flip the chilla and cook the other side for another 2 minutes.
5- Serve:
- Remove the chilla from the pan and transfer it to a serving plate.
- Serve hot with chutney or yogurt.
