I like vegetables a lot. There are a lot of beautiful and tasty regional and seasonal vegetables to eat but some people may haven't have a chance to get to know them. I am now looking about a format to introduce them at the market I sold young plants in spring and summer.
Veggie chips can be an option as root veggies that are suited for chips will be in season. I like their earthy taste. As chips, it becomes easier for most of the people to give them a try.
It's not a root veggie but Kale, which also will be in season adds a vivid green color.
My family liked it. Especially my daughter ate well. She eats well most of the things though ... 😅
But I'm not sure chips is a right format. I try to think about another options and make prototypes time by time. I'm happy to hear from you!
I just want to shout "Seasonal & regional veggies are tasty, let's eat them!!!!!!" as a veggie fan 😊
春夏に野菜苗を売っていたマーケットで、地域の季節の野菜を多くの人が食べやすい形で紹介できないかなと考えています。
秋冬の庭は葉物や根菜が増えるので、苗を売る季節ではなくなってしまうというのもありますが、いろいろな野菜が並んでいるものの「なんとなく食べず嫌い」「どうやって使っていいのかわからず手を出さない」って人もいると思うんです。そんな人たち、子どもたちが地域の季節の野菜を食べるきっかけになったらいいなと思っています。
なるべく形と味を残して、気軽に楽しめるものはないかなと考えていて、野菜チップスが思い浮かび、試作してみました。これから旬のパースニップとビーツがおいしいです。ケールを入れると色が明るくなっていい感じです。私の家族はとても気に入ってくれて、完食、もう一回揚げてもまた完食。。。
ただ、まだもっといいフォーマットもあるのかもと考えていて、アイディアは固まっていません。大量に揚げ続けるのも、揚げた油を廃棄しなければいけないのもすっきりしません。オーブンで作る方法も試しながら、他にもフォーマットがないか考えてみようと思います。

Kale chips are very popular here, at least among health food store people. LOL Good on you for trying new foods!
