Today was again a busy day and when we talking about lunch, when I’m low on time I like to make something simple, fast done and still delicious.
This is my easy mushroom risotto and I hope you gonna like it.

I’m going to talk you thro my recipe.
WHAT YOU GOING TO NEED 🧐
1 onion - I forgot to buy one so I used garlic
450 g of frozen vegetables mix - you can use fresh vegetables I was in a hurry so this was great, also you can use any mix u want, mine was Mex mix ( carrots, corn, peppers, husk and peas )
mushrooms - again any you like - I used Shiitake, Champignon and Oyster mushroom
rice, salt, pepper, oil and 1 or 2 beef cube ( depends how many rice are you cooking)
Also you can put meat if you want to , I didn’t

1️⃣# Heat the pan, put oil in it and put the mushrooms in it. Fry them on a low heat and mix them, after they got nice brownish color and clenched a bit ( they don’t look soggy ) put them aside - we gonna need them in a bit.

2️⃣# Put the fine chopped onion or garlic in an pot on a low temp. with a bit of oil and fry it till it gets nice color, put the vegetable mix in mix it with the onion let the vegetables fry a bit too, add the mushrooms and a bit of water, so the vegetable lets its juices out too and you also steam the mushrooms a bit. Let it like that for about 10 min and don’t forget to mix it at least two times.





3 fingers of water or almost half

3️⃣# When 10 min pass, add the rice, salt, pepper, again little water and beef cube.
This was my rice measure- 2 cups


IMPORTANT : key to this risotto is adding very little water , not to much so the rice isn’t soggy, we are steaming her while also slowly cooking her - low temp. again
Mix it and cover the pot. Let it like that for a bit but don’t forget to mix it, because we are putting in water little by little the rice starts to burn quick

You add water till the rice is almost cooked. I added water for about 5 or 6 times in this step ( two fingers of water) - for a measure
If some rice isn’t cooked enough don’t worry, we gonna let it steam some more.
4️⃣# When the rice is, we can say 90% cooked, put it aside and cover it for 10 min - we are steaming her some more.


And we are done, I know it looks too much , but it’s actually really easy, just need to mix and add water little by little :D.
