....bake a lemon meringue pie!
I recently purchased a large bag of lemons with the intention of grating the peel and then juicing them. I ended up with a great deal more juice than anticipated, so pulled out my trusty recipe for lemon meringue pie. I hadn't made one for a long time, but figured it would turn out just fine.

I was well into the process before it occurred to me to take some pictures for a Hive post. First, I baked a 9" pie crust. Then I cooked the filling on the stove top. After it was poured into the pie shell, I whipped up the meringue with my Kitchenaid mixer. Then I dropped spoonsful of the meringue onto the hot filling, and that's when this picture was taken.
After I spread around the meringue and attempted to make it look decorative, this is how it appeared.

It came out of the oven looking perfect! I didn't even check it ahead of time to make sure it wasn't getting too brown. There was no "weeping" around the edges, so I must have successfully sealed the meringue to the crust.

There are three of us eating it, so why cut it into the usual eight slices?

And it tasted just as good as it looked!
That looks beyond scrumptious! Your meringue turned out especially floofy beautiful. Lemon meringue is my dad’s favorite and my husband’s most hated kind of pie (there’s a story there), it makes for a bit of family feud fun when one pops up in the presence of us all, lol. Me, I love lemon anything, and I so wish there was no social distancing, I would come begging a bite or two :)
I purposely froze some of the juice in 1/2 cup quantities for future pies....
