These delicious pancakes filled with sweet cottage cheese and raisins can make a light dessert or perfect breakfast. These russian blini recipe is ideal for a big family and also if you want to make food ahead of time. Those golden little sun-like russian crepes or pancakes, or how we call them Blini are loved by many Russians or Eastern European in fact as a common weekend breakfast. Blini are also a ritual food in Russia. They symbolize sun and are the main food during Maslenitsa (or butter week in translation), the festival that takes its roots in ancient Slavic history, it celebrates upcoming spring just before the Great Lent that takes place before the Orthodox Easter. During the Maslenitsa blini are baked and eaten in enormous amounts on its own or with all kinds of fillings, savory or sweet!! One of my favorite sweet fillings for blini is tvorog (farmer’s cheese) mixed with lemon, raisins and sugar. For me, it’s a pure indulgence to eat hot of the pan blini with creamy and sweet tvorog!

Ingredients

For Blini

2 cups or 500 ml of milk

3 Eggs

1 1/3 cups or 280 gr of flour

1-2 tbsp of Sugar

1 tsp of salt

3 tbsp of vegetable oil

Butter for greasing finished pancakes

For the filling

250 gr of dry cottage cheese ( you can use quark, farmers cheese, or ricotta) Tvorog

2 tbsp of sour cream

3-4 tbsp of sugar

50 gr of raisins

1/4 lemon juce

1 tsp of lemon zest

Directions:

Step 1 : Mix your eggs with sugar and salt. Add milk and mix again.

Step 2 : Add flour and oil and mix well. it will be nice and thin batter.

Step 3 : Add a bit of butter or oil into your pan. Pour one ladle of the pancake mixture an cook for few minutes on each side until cooked and golden. Set them aside while you make the filling.

Step 4 : In a bowl add dry cottage cheese, sour cream and sugar, mix everything and then use a hand blender to really smooth out the mixture. You can also sit the cottage cheese before if you don’t have a hand blender. Then add lemon juice, lemon zest and raisins, mix everything together and set aside.

Step 5 : Add 1 large tbsp of the mixture inside each pancake and then roll it out starting from bottom, then closing the sides and rolling it up. You can freeze them up to 3 months, or keep them in a fridge for 4 days. If you are eating them straight away, i suggest to fry them in some butter with oil on both sides until they are crispy.

Step 6 : Serve them with icing sugar, fruit or berries. Add sour cream, or jam! Enjoy!

Это достаточно простое блюдо которое очень по душе как детям так и взрослым. Такие налистники хорошо подавать вместе с медом, сметаной или со сладким вареньем, а можно полить их сверху карамелью или растопленным шоколадом. Очень удобно делать такие налистники в большом количестве, а потом разделить на небольшие порции и поместить в морозилку, а когда понадобиться разморозить и обжарить на сковородке или запечь в духовке.

Ингредиенты

Блины

500 мл молока

3 яйца

280 г муки

1-2 столовые ложки сахара

1 ч.л. соли

3 столовые ложки растительного масла

Масло для смазывания готовых блинов

для творожной начинки

творог - 250 г

сметана - 1-2 столовых ложки

изюм - 50 г

лимон - 1/4 шт

сахар - 2-4 столовых ложки

oh really nice!! what a shame i missed it!! i couldnt afford it tbh! and ive decided to spend that money on my health as ive been really stressed!

There's no better dessert than sweet crepes, they are my guilty pleasure. :D Yours look absolutely delicious, will have to try this recipe. Thanks for sharing!
